Notes: In the village of Edderton, formerly known as the “parish of the peats” lies Balbair Distillery, surrounded by beautiful country side. The distillery, named after the nearby Balblair Farm, where it was originally built in the 1790’s, moved to its present site in 1895. The buildings have changed little since then, the main characteristics being the pagoda-roofed kiln, sadly no longer in operation, and the 70 foot high red brick chimney, both visible for miles around. TASTING NOTE Colour: Straw, yellow. Without water Nose: Closed - sweet, smoky with some cereal notes. Palate: Smoky with a slight medicinal note. With water Nose: Sweet and smoky - cured bacon. Green, leafy notes - reminiscent of pine resin. Palate: Sweet with spicy elements - earthy/mossy/birchwood. Medicinal edge with a slight saltiness. Body: Soft and rounded. Finish: Aromatic - hints of birchwood. Cask Type: Refill Bourbon Barrels. Whisky Style: Full, rich flavours delivered in a sweet, soft dram - very more-ish.
